Sunny side up in sautéed mushroom

Ingredients:

 1 Lb. baby spinach (washed well not chopped)

1 Lb. white button mushroom (washed well sliced)

1 Tbsp. olive oil

1 small red onion (sliced)

4 eggs

1 tsp. cayenne pepper

1 tsp. salt

Sautee onion until translucent

Add mushrooms, sauté on high heat do not let it burn but let all juice disappeared.

Add spinach sauté all few more minutes on high heat by stirring constantly until all juice disappeared.

Open 4 little spaces in the sautéed spinach and break one egg on each space.

Close the lid; turn the heat low cook it until egg yolks cooks but not too hard.

 You can serve immediately with side elements of Mediterranean breakfast.
