Old Fashion lime jell-o salad

This recipe was Mother Maxine’s Treat for our Christmas Dinners for years.
Sadly, Mother Maxine is not with us anymore, so we wanted to keep the tradition going. I searched her Recipe book and this was the recipe I found. For some reason she omitted mayo recently but I applied the original recipe.

Ingredients:
2 Pkg (3 oz ea.) Lime Jell-O
1 C liquid (1/2 C pineapple juice +1/2 water)
1 C crushed pine apple in can. (One can is too much just take 1 C out of it)
1 C light mayonnaise
1 C evaporated milk
1 C small curd cottage cheese
1/2 C chopped walnut
Maraschino cherries
Green candied cherries to decorate
 
Making:
Add both packs of the lime Jell-O in a mixing bowl
Add 1/2 of boiling water and dissolve mixing the Jell-O until liquid gets clear
Add cold 1/2 pine apple juice keep mixing until mixture homogenized
In and another bowl bring mayonnaise and evaporated milk together and mix well until it gets smooth
Add Mayo and milk mixture into the Jell-O, mix really well
Add crushed pine apple and cottage cheese mix it until all combined well.
Add chopped walnut, mix well
Pour the Jell-O mix into a 8X8 size dish.
  • You can pour into a cake pan and flipped it over once the Jell-O settled.
Place in a refrigerator for couple hours to settle
