Flour less Spinach Breakfast cake
Ingredients:
1 lb baby spinach 1 small onion 1 Tbsp. olive oil 6 eggs 100 ml milk 1/4 C oat flour or wheat germ 3 Cups mozzarella or Spanish quesadilla cheese 1/4 C feta cheese Salt and pepper as desired Making: Prepare 9x9 Pyrex dish coating the bottom with butter and flour Slice the onion Heat the olive oil Sauté the onion until translucent Add spinach and sauté all together until spinach semi cooked. Don’t put any water. Add crumbled feta cheese salt and pepper mix gently set aside Separate egg yolks from the whites Whip egg whites until it gets solid white foam In the other bowl mix the egg white milk Add oat flour mix gently Add mozzarella mix all together until all ingredients incorporated. Fold in egg whites very gently Finally add cooked cooled spinach mix gently all together Pour into the prepared dish Bake in 355 F oven for 25 minutes. Check if the middle of the cake settled. Take out of the oven cool the dish on the rack for 10 minutes. Cut in 1.5 inch squares , enjoy! 6/16/2025 Back to Breakfast page |
