FLAN

Some People don’t like Chocolate!
How come?  The most satisfying flavor of all time! 
Well! They don’t, and if you invite a friend for a dinner that doesn’t like anything with chocolate, “Flan” could be your one of the best choices as an after meal dessert.
 It is really an easy to make it, however I never tried because I wasn’t sure if I could be successful turning sugar to a caramel. That is the most tricky part of making Flan.
Because it is a split second time adjustment between burning the whole caramel and or taking the caramel off the heat at the right time. It requires practice and expertise.  Lets do it!
 
Ingredients
8 ramekins (Pyrex flan /pudding bowls)
1 1/4   C crystalized sugar
6 eggs
1 can (14 oz.) sweetened condensed milk
2 C whole milk
1 tsp. vanilla
Large raised side baking dish (filled with hot water up to half way of the dish.

Making:
Prepare the flan bowls in order to be place the caramel
Caramel
Set the oven 325 F (163 C)
Set 3/4 C of sugar in a saucepan and place the pan on a medium heat.
Watch for easy 7 min. for the sugar start melting (Do Not Mix!) Just watch.
Let the whole sugar melt and as soon as sugar melts, start mixing with silicon spoon or spatula. Within 1 minute caramel starts bubbling (another word “boiling”)
Take the pan off the heat in another 1 minute.
Immediately share the whole caramel into the 8 bowls. (This way only 1 Tbsp.  Caramel bottom of each bowl gets.
Set aside.
Helpful note 1*** Writing about making caramel is easier then making it unless you are experienced. So do not be discouraged. Try again.
 Helpful Note 2***If caramel is burned it takes all the essence away from the flan, therefore if you burn the caramel. Do not go any further; just do another batch of caramel.
 
Custard
In a blender break all 6 eggs and blend few seconds
Add the condensed milk bland again
Mix in the milk blend one second.
Gradually add 1/2 C of sugar and 1 Tsp. vanilla
Blend another few second.
Share the custard between 8 ramekins
Place the ramekins in a large baking (high side) dish
Fill the baking dish with hot water up to the half way of the custard bows
Place the water bath in an oven and Bake for 50 minutes.
Insert a toothpick in one of the flan toothpick should come out clean.
Remove the water bath from the oven and take all flan bowls out let it cool.
Helpful note 3*** take the flan bowls of the water right away otherwise custard may keep cooking and may become eventually unpleasantly solid.
 
When all bowls are cool enough place them in the refrigerator. 1 hr. rest in the fridge is good enough to serve.
Flip each bowl upside down in a desert dish; decorate with raspberry and mint leave
Serve.
It is a yummy desert.
 Advice: This is a very delicious desert. However one bowl of Flan has approximately 400 Cal.  And sugar in general is not too nutritious. Therefore keep your apatite for flan for occasions or once in a while favor for yourself and your friends.
