Fava Bean Appetizer

Ingredients:
2 C dried fava beans
4 C boiled water
1 big yellow onion
¼ C olive oil
1 lemon juice
 2 Tsp.salt
2 Tsp. sugar
 
Making
Wash the dried beans well
Dice the onions and Sautee with olive oil in a medium size pan and on medium heat.
Sautee until onions pieces get translucent and slightly pink. (do not burn)
Throw the beans in,
Add 3 cups boiling water. Bring the heat low (not simmer)
Add salt and sugar and lemon juice, keep sauteing one more minute.
Stir couple times, and let the bean cook until they get soft about 45 minutes.
Stir every once in a while. Add last cup of water gradually according to beans absorb the water
The most important part of making this dish well is to decide when to take off the heat.
There has to be some little amount of water left in the pan when beans must be totally cooked to pudding like texture.
Let the cooked beans cool down, and mash with soup mixer potato masher gadget.
You will end up having a very tick pudding like texture.
Pour the bean puree into a desired mold. Let it cool in the room temperature, then close the lid and keep in the refrigerator until the puree set to hardened.
Flip the puree on a flat dish
Garnish with freshly minced dill and drizzle some olive oil on it.
Cut slices to serve.
