Double chocolate moisten cake

Ingredients:
3 eggs (Yolks and egg whites separated)
1/2 C raw sugar (or cane sugar)
1/2 C salt less butter
1/2 C baking chocolate
1 C mineral water
2 Tbsp. Cocoa powder
1 Tbsp. apple cider vinegar
1 Tbsp. baking powder
1 1/2 C almond flour
3/4 C unbleached flour


Moistening sauce:
1 C milk
2 Tbsp. cocoa powder
1/2 C sugar
1/4 C butter


Chocolate sauce:
1 C whipping cream
1/2 C Chocolate chips


Making:
In a mixing bowl, whip egg yolks and sugar until it gets creamy
Whip the egg white until it gets foamy.
Melt the butter and chocolate together in a measuring cup.
In order add, mineral water, melted butter and chocolate, mix with spatula
Add Cocoa powder
Almond flour along with baking powder
Mix by folding,
Sift the flour through sifter, mix by folding
Fold in foamed egg white,
Add chocolate chips
You must have thick but liquid batter
Pour in greased and floured 9X9 square Pyrex dish
Bake in 350F (180 C)
For 35 minutes.
In the meantime, prepare moistening sauce:
Bring all moistening sauce ingredients in a small sauce pan,
On a medium heat mix continuously until boils.
Set aside to cool down.
Pour this sauce on baked cake evenly and let it absorb all liquid.
Heat whipping cream in a glass measuring cup
Add chocolate chips (no heat at this point), mix by fork until chocolate incorporate into hot whipping cream and becomes a chocolate sauce.
Pour the chocolate sauce all over the cake.
Let is sit for an hour to serve.
