Picture

3 oz. lemon jello mix
1 C boiling water
1/2 lemon juice
1 pkg. cream cheese
1/2 C raw sugar
1 Can (12 oz.) evaporated milk
2 tsp. vanilla
2 C original graham cracker
1/2 C butter
8 x 8 inches Pyrex dish

Making:

In a bowl add boiled water into jello mix; dissolve very well until liquid becomes completely clear
Add lemon juice and place in refrigerator to let the jello set slightly (don’t close lid)
Meanwhile, in another bowl, blend sugar and (room temperature) cream cheese until well incorporate into each other, add vanilla
Set a side
Melt the butter in the Pyrex dish,
Grind the Graham crackers add into the melted butter.
Spare 1/4 of it and pack the rest at the bottom the Pyrex dish.
Take the slightly thickened jello out of the fridge, add cream cheese mixture and blend well
Empty evaporated milk in to a mixing bowl and whip it bringing to a foamy texture.
Fold the milk into a cream cheese jello mixture.
Pour the whole filling on to graham crust
Sprinkle some graham cracker mix and lemon rinds.
Chill in refrigerator until it sets well (about 4 hrs. at least)
You can serve topping fresh fruit or home made berry sauce.
