Celery Root Fritters

Ingredients:
One half of celery root
One carrot
1 Tbsp nutritional yeast
1/2 C Flour
1 tsp Himalayan salt
1 tsp chili pepper (1 tbsp. buffalo wing sauce)
2 eggs
1/2 C dill (chopped)
1/2 C parsley (chopped)
3 tbsp. avocado oil (to pan-fry)
 
Making:
Peel the celery root with peeler chop in big pieces
Peel the carrots chop in big pieces
Grind all together in a chopper with dill and parsley together.
(You may chop the parsley and dill separately and combine into mixture)
Add eggs, blend with one pulse,
Transfer the grind-ed celery into a mixing bowl.
Add the flour and nutritional yeast
Add salt and chili pepper (buffalo sauce gives extra taste but it is optional)
You must have thick enough dough mixture to spoon it  (but soft not to be able to handle by hand)
Heat the oil on a flat pan on medium heat
Use serving spoon to lay each portion of fritter  on the pan and fry each side until fritters turn to golden color and solid ( couple minutes for each side approximately .
Serve warm with blue cheese sauce or even better with ranch sauce aside.
