Nutty blueberry cake
Ingredients:
1/4 Cup sugar 1 egg 1/2 C whipping cream 1/3 C butter (cold cut in cubes) 1tsp. grated lemon peel 1 Cups unbleached flour 1 C almond flour 2 C frozen blueberries Topping: 2 Tbsp butter 2 Tbsp sugar 2 Tbsp flour 1/4 C chopped hazelnut or walnut 1 tsp. cinnamon 1 tsp. nutmeg Making: First prepare the topping and set aside Bring together all topping ingredients in the food chopper Give a 15 second pulse and set aside. Making the cake: Whip sugar and an egg until combination becomes creamy Then add dry ingredients in order except blueberries Mix them all with dough making attachment of the mixer and slow speed, until all ingredients well incorporated. Dough will be rather hard and sticky Add blueberries and mix in the dough very gently, try not to mash the blueberries. Pour the batter in to the flat pan. Flatten the surface Spread the topping evenly. Bake the cake in 350 F for 40 minutes. 6/16/2025 Back to Baking Kitchen page |
