Baked Cod With grilled cheese sandwich

I created this sandwich after visiting Brunswick, Georgia eating the best fish sandwich in the restaurant going to Jekyll Island.

Ingredients:
1 Lb. Cod fleet (one side of the fish) (makes three sandwich)
1 Middle size tomato
A few leaves of Crispy fresh lettuce
1/2 C grated mozzarella cheese
1/4 C chopped parsley
2 Tbsp. olive oil
4-5 Cloves garlic
1 middle size white onion
2/3 C melted butter
1 tsp. thyme
1 tsp. Cajun seasoning
1 tsp. cayenne pepper
1 Tbsp. minced garlic
1 tsp. Himalayan salt
3 whole grain sandwich buns
 
Making:
Combine melted butter, thyme, cayenne pepper, Cajun seasoning, minced garlic, salt.
Mix parsley and olive oil and spread on fillet also
Brush the mixture on the cod fillet. Marinate for 10 minutes.
Bake the marinated cod at 400F for 15minutes.
In the meantime, slice the onion and separate the cloves of garlic (do not peel)
Heat 1/2 Tbsp.  olive oil and pan fry onion and garlic slightly.
Take the baked fish out of the oven top with grated mozzarella cheese
Return to the oven for 4 more minutes.


Putting the sandwich together:
Halve the sandwich buns, place inner face down on the grill heat slightly
Spread very light coat of garlic butter (or butter only) -Or as a preference thin layer of mayonnaise-
Divide the cod in three pieces, and place each piece on the one side of the bun,
Top with pan-fried onion, a slice of tomato and lettuce cover with the other half of the bun.
Enjoy with fried garlic aside.
